January Menu (A Healthier Attempt)
This is my first menu post. Depending on the response it gets, I’ll continue to do them once or twice a month.
It’s mid January and I’ve been trying to make “healthier” choices this month like eating more whole grains, fruit, & salads. I’m taking it a day at a time because I don’t want to overwhelm myself.
My biggest downfall is SWEETS!!! OMG I love sweets! I only made 3 desserts this week so that’s a big step. I really didn’t cook much this week. We’ve been really busy with various projects so our menu has been pretty blah.
I’m proud that we didn’t revert back to eating out on busy days though, just once this week like we budgeted for. There were lots of fresh fruit, yogurt and salad on sale since it’s January and a lot folks are trying to eat healthier. I totally took advantage of that and stocked up. I have frozen yogurt drops stashed away in the freezer for future smoothies. I froze a lot of fresh blueberries and strawberries that were on sale as well.

MONDAY:
Breakfast: Organic Fruitful O’s Cereal w/ Almond milk
Lunch: Roasted Turkey & Provolone Sandwich, Mixed Fruit, Homemade Potato Chips
Dinner: Spaghetti, Salad, Yeast Rolls (Sister Schubert)

TUESDAY:
Breakfast: Homemade Blueberry Pancakes, Scrambled Eggs, Turkey Bacon
Lunch: Chicken Ramen Noodles with steak, broccoli and red pepper flakes,
Dinner: Honey Curry Chicken Legs, Stove-top Mac n Cheese, Steamed Broccoli, Yeast Rolls (Sister Schubert)

WEDNESDAY:
Breakfast: Cheese Grits, Scrambled Eggs, Turkey Bacon, Mixed Fruit, Toast
Lunch: Chicken Sandwich, Homemade Chips, Baby Carrots, Chocolate Chip Cookies (Chips Ahoy)
Dinner: Tomato Bisque (store bought), Grilled Cheese Quesadilla, Salad

THURSDAY:
Breakfast: Breakfast Sandwich (eggs, cheese, tomato,) Blueberry Yogurt
Lunch: Leftover Spaghetti, Salad, Yeast Rolls,
Dinner: Cheesesteak Sliders, Homemade Cajun Fries

FRIDAY:
Breakfast: Organic Fruitful O’s Cereal, Almond Milk
Lunch: Roasted Turkey & Cheese Sandwich, Homemade Chips, Mixed Fruit
Dinner: (Went to Grandma’s House) Baked Chicken, Collard Greens, Rice & Gravy, Cornbread, Biscuits, Candied Yams, BBQ ribs

SATURDAY:
Breakfast: Cinnamon Raisin Granola, Strawberry Yogurt, Banana
Lunch: Chicken Nuggets (frozen), French Fries (frozen), Steamed Broccoli & Cheese
Dinner: Turkey Meatloaf, Rice, Green Beans

SUNDAY:
Breakfast: Breakfast Burrito (eggs,smoked cheese, tomatoes, green peppers, onions,) Blueberry Yogurt
Lunch: Roasted Turkey & Cheese Sandwich, Homemade Chips, Mixed Fruit
Dinner: (Out To Eat) Chicken Burrito & Mexican Rice

DESSERTS & SNACKS
Strawberry Cobbler, Fruit Salsa w/ Cinnamon Tortilla Chips, Snickers Bar Brownies, Oreos & Vanilla Ice Cream (don’t judge me)
